1. bake cake...check
2. crumble cooled cake into large bowl....check
3. make/buy frosting...check, check
4. dumping frosting into bowl with crumbled cake...check
5. mix...check
6. form balls...check
7. put lollipop stick into cooled cake balls (optional)...check!
8. coat pops with chocolate/candy melts....fail!
so...I've tried leaving step 7 out...
I've tried leaving step 7 in...
I always...always fail on step 8....
and by fail I mean I get a big fat F...
F as in fire...
yes...fire! I caught the candy melts on fire...
in the microwave on 50%...
yes, I managed to start a fire...
and that's when I quit...
bagged up 48 Creamsicle & 48 Dark Chocolate Mocha cake pops
and shoved them, minus the pretty candy coating into my freezer!

a cake that was very yummy...
and my version of a cake 'pop' because the flavor was dreamsicle or creamsicle or whatever you call the orange and cream flavored popsicle's...
I adapted the recipe from Domestic Rebel's Creamscicle Cake Pops and turned it into a 2 layer 9 inch cake.

Creamsicle Cake with Orange Cream Cheese/Butter Frosting
1 box yellow cake mix
1 small box vanilla instant pudding mix (not mixed)
4 eggs
1/3 cup oil
1 cup orange juice
1 Tablespoon grated orange peel
Preheat oven to 350. Mix all together for 1 minute using electric mixer, scrap down sides and then mix on medium for 3 minutes. Bake according to directions on box and the size pan(s) you use.
Orange Cream Cheese/Butter Frosting
1 8z pkg cream cheese (room temp)
1 stick (8 Tbl) butter (room temp)
3 tsp orange extract
4 cups powdered/confectioners sugar
orange juice if needed
Cream together cream cheese and butter, slowly add orange extract and powder sugar. Depending on desired consistency you may want to had a tsp or 2 of orange juice...if you add too much juice just add more powdered sugar. (recipe frost a 3 layer 9 inch or generously frosts a 2 layer 9 inch cake)
Let cake cool completely and frost.

Dear Kim,
Yes I know you called me frantic 4 days before the shower telling me you couldn't make cake pops. Saying cake pops are stupid and can't be made. Yes, I know I talked you off the cake pop ledge, gave you a pep talk, assured you that you could make them and that they'd be wonderful. I was right, you Kim, master of the lemony drops of heaven cake pops, can make cake pops! I, Kiera Chambers, can NOT make cake pops. Well, I can make the cake pops all the way up to step 8, coating them in the candy coating part, and then I can bag them up and freeze them!
please forgive me dear friend for ditching the cake pop dream!
